Making “lava lamps” is a fun STEM activity for kids that is also just fun. In general these types of projects are made by mixing oil and water along with some other ingredients, which provides a good opportunity to talk about why oil doesn’t mix into water.
But there are lots of ways to make different kinds of lava lamp like projects. I especially like this glow in the dark version from Science Kiddo, which also allows you to talk about how glow in the dark things work.
(Short answer: components of the glow-in-the-dark material are phosphors, which are charged in sunlight and then emit the light back in the dark.)
This one also uses fizzy tablets so you get fizzy glow in the dark stuff. How fun!
