Rowdy in Room 300 has a cute Easter bunny color by code page for learning sight words. You can also use color by code to practice numeracy with these coloring pages from Frogs and Fairies that include different representations for numbers like dominoes, hands, dots and hash marks.
Frog and Fairies also has some cute bunny counting puzzles, where kids can match the number with the number of bunnies in the house shown on the other side of the puzzle. Or practice different kinds of number matching to build a bunny with this printable activity that’s from the Frogs and Fairies Teachers Pay Teachers page. (I didn’t even realize this one was theirs, too, until I started writing about it!)
There’s also a couple of basic color by number Easter bunny printables from The Best Ideas for Kids.
Make the bunny hop through the numbers with this cute little game from Tot Schooling that you can play lots of different ways (the post with the free download suggests a few). They also have an adorable feed the bunny shape matching game your preschoolers will love.

If you want a little religious content in your Easter bunny learning activities, check out this cute printable activities booklet from The Purposeful Nest. It includes a maze, I-spy and a couple of coloring pages, one of which includes crosses. This would be a cute activity to tuck in an Easter basket or to keep the kids occupied while waiting for Easter dinner.
